250g of coffee roasted by Jokes Aside Coffee Roasters in Brno, Czechia
Producer: Ana Mustafa
Region, city: Risarald.a, Pereira
Processing: Fed-batch washed
Our friends Ana Mustafa and Herbert Peñaloza had the idea for fed-batch processing when they needed to process a lot of coffee at once. They put three consecutive picking days on top of each other into the fermentation tank, de-pulped and with the parchment as well. In the three layers, a wild fermentation process took place. If the temperature in the tank would go too high, they'd slow it by adding water to the process. After the dry fermentation, the coffee was mechanically dried at low temperature for two days.
Crucero is specific as the processing results seem to work the best only at one farm from the six Ana manages. The main reason for that is the presence of specific bacteria and yiests in the porous walls of the cement fermentation tank.
Translated into cup quality, the brew is rich with heavy mouthfeel, tropical vibe and cacao finish.
Tropical - winey - cacao nibs. Clean, yet pleasantly boozy.
